What Does This Berry Kombucha Taste Like?
- This berry kombucha has a refreshing balance of sweet and tart flavours. The cranberry beautifully complements the natural tanginess of black tea kombucha, while the blueberries add subtle sweetness and depth.
- For a lighter, fruitier drink, enjoy it immediately after mixing. For a richer flavour and increased natural carbonation, allow the kombucha to undergo a second fermentation for several days.
- Fresh lime and lightly crushed mint provide a bright, refreshing finish that makes this recipe perfect for warmer weather.

Before You Begin
- For second fermentation, use a clean glass bottle designed for carbonation with a secure flip-top or screw-top lid. Always leave a small amount of headspace at the top of the bottle, as natural carbonation will build pressure during fermentation. Ferment in a cool place away from direct sunlight and refrigerate before opening to reduce excess pressure.
How to Make Fizzy Berry Kombucha
- Brew your Organic Black Tea Homemade Kombucha and allow it to cool to room temperature.
- Pour the kombucha into a clean second-fermentation bottle.
- Add the cranberry juice and organic raw sugar.
- If desired, add fresh blueberries to the bottle to create a deeper berry flavour during fermentation.
- Seal the bottle, leaving a small amount of headspace.
- Leave to ferment for approximately 3–7 days, depending on your preferred balance of sweetness and natural carbonation.
- Once fermentation is complete, refrigerate the bottle until thoroughly chilled.
- Carefully open the bottle to slowly release any built-up pressure.
- Pour into serving glasses.
- Garnish with fresh blueberries, lime wedges and lightly crushed mint before serving.
